{"id":26,"date":"2006-03-31T23:35:08","date_gmt":"2006-03-31T23:35:08","guid":{"rendered":""},"modified":"2017-07-31T13:03:50","modified_gmt":"2017-07-31T12:03:50","slug":"bechamel","status":"publish","type":"post","link":"https:\/\/dafrenchcooking.fr\/?p=26","title":{"rendered":"B\u00e9chamel"},"content":{"rendered":"<p>Avec cette sauce, ultra-connue, on en fait plein de trucs qu&rsquo;ils sont bien bons: l\u00e9gumes en gratins, viandes, souffl\u00e9s&#8230;<br \/>\n<!--more--><\/p>\n<h3>Ingr\u00e9dients<\/h3>\n<ul>\n<li>40g de beurre<\/li>\n<li>1 cuiller \u00e0 soupe de farine<\/li>\n<li>1\/2 litre de lait<\/li>\n<li>sel<\/li>\n<li>noix de muscade<\/li>\n<\/ul>\n<h3>Pr\u00e9paration<\/h3>\n<ol>\n<li>Dans une casserole, faire fondre le beurre \u00e0 feux doux.<\/li>\n<li>Une fois le beurre fondu, mettre la farine et m\u00e9langer avec une cuiller en bois.<\/li>\n<li>laisser cuire quelques minutes en remuant pour que \u00e7a n&rsquo;attache pas, le m\u00e9lange doit blanchir un peu.<\/li>\n<li>mouiller ensuite avec tr\u00e8s peu d&rsquo;eau, le m\u00e9lange doit former un p\u00e2ton, puis ajouter le lait progressivement en dehors du feu, bien m\u00e9langer pour ne pas avoir de grumeaux.<\/li>\n<li>une fois tout le lait ajout\u00e9, remettre sur le feu et cuire l&rsquo;ensemble en remuant sans arr\u00eat: l&rsquo;ensemble doit \u00e9paissir.
