Il faut avoir pr\u00e9par\u00e9 un <a href=\"https:\/\/dafrenchcooking.fr\/2020\/03\/21\/ginger-bug-ou-levain-de-gingembre\/\">levain de gingembre<\/a> pour pouvoir faire cette bi\u00e8re.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mat\u00e9riel (pour environ 2L de bi\u00e8re)<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>un grand bocal \u00e0 conserve avec caoutchouc de 2L (type Le Parfait)<\/li><li>entonnoir<\/li><li>tube alimentaire pour siphonner<\/li><li>passoire ou chinois<\/li><li>mandoline<\/li><li>une grande casserole<\/li><li>bouteilles \u00e0 canette<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Ingr\u00e9dients (pour 1L de bi\u00e8re)<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>1L d&rsquo;eau filtr\u00e9e non chlor\u00e9e<\/li><li>50g de sucre blanc ou de canne<\/li><li>50g de gingembre frais r\u00e2p\u00e9 (d\u00e9j\u00e0 assez piquant) avec ou sans peau selon le go\u00fbt<\/li><li>50ml de jus de citron (juste pour le go\u00fbt)<\/li><li>50ml de levain de gingembre (il faut 5% minimum du volume d&rsquo;eau et jusqu&rsquo;\u00e0 10%)<\/li><li>\u00e9ventuellement d&rsquo;autres \u00e9pices optionnelles (selon les go\u00fbts) :<ul><li>1 \u00e0 2 \u00e9toiles d&rsquo;anis<\/li><li>10 grains de poivre<\/li><li>3 gousses de cardamome<\/li><li>1 clou de girofle<\/li><\/ul><\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Pr\u00e9paration<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>dans une grande casserole mettre l&rsquo;eau, le sucre et le gingembre r\u00e2p\u00e9 \u00e0 la mandoline<\/li><li>porter \u00e0 \u00e9bullition et laisser infuser 15min au moins<\/li><li>laisser refroidir<\/li><li>mettre le jus de citron<\/li><li>ajouter le levain de gingembre<\/li><li>mettre dans le bocal et le fermer herm\u00e9tiquement<\/li><li>laisser fermenter \u00e0 temp\u00e9rature ambiante entre 2 et 5 jours : le liquide devient effervescent (il faut bien remuer chaque jour : attention \u00e7a peut mousser et d\u00e9border!)<\/li><li>filtrer ou siphonner pour \u00e9viter d&rsquo;avoir trop de d\u00e9p\u00f4t et mettre en bouteille \u00e0 canette avec joint et fermeture m\u00e9canique<\/li><li>mettre les bouteilles au frais 48 \u00e0 72h et <strong>D\u00c9GAZER REGULIEREMENT<\/strong> car la pression monte vite : une seconde fermentation se met en route<\/li><li>mettre au frigo pour conserver cette bi\u00e8re pendant plus de 2 semaines. Elle deviendra moins sucr\u00e9e et plus alcoolis\u00e9e avec le temps.
